Recipe: breakfast cobbler
Looking for a fresh family breakfast? This lightened up version of a berry cobbler is a great option. Walnuts offer heart healthy omega-3 fatty acids, berries provide an abundance of nutrients and antioxidants, while oats add fiber and non-fat yogurt provides a good source of protein, says Chelsey Lindahl, MultiCare Health System dietitian. This breakfast is an especially fun weekend or holiday treat!
Makes 1 serving
1 6-ounce carton fat-free yogurt
7 walnut halves, chopped
2 or more tablespoons berries (raspberries, blackberries or blueberries)
3 tablespoons oats, dry
2 teaspoons brown sugar
1 teaspoon butter or margarine
Starting with the yogurt, layer yogurt, chopped nuts and berries in a 2-inch by 4½-inch oven-proof ramekin.
In a small bowl, combine oats and brown sugar.
Into oat mixture, cut butter with a table knife to combine.
Sprinkle oat mixture over berries.
Preheat oven to broil.
Place ramekin in oven and watch while top browns (takes about 1 minute), rotating ramekin if necessary for even browning.
When oat topping is browned, turn off oven and let cobbler sit for 5 minutes to heat through.
