Recipe: Robin's Flax Snacks
These no-bake Flax Snacks are a simple and satisfying snack for at home or on the go. They pack fantastically well for busy days running errands, at work or driving kids to and fro. This healthy snack contains flax meal which is an excellent ingredient to add to your nutrition arsenal. It is high in fiber, vegetable protein, vitamins, minerals, antioxidants, and heart healthy omega-3 fatty acids. Consider adding flax meal to baked goods, breakfast cereals, granola and smoothies.
Makes 20 servings
Ingredients
1/2 cup almond butter (my favorite is Kettle roasted almond butter)1/4 cup flax seed meal—Bob’s Red Mill brand (www.bobsredmill.com) or other brand of your choice1/4 cup real maple syrup (not the type made with corn syrup)1/4 cup unsweetened cocoa powder1/4 cup protein powder1/4 teaspoon cinnamon1/4 cup unsweetened dry coconut
InstructionsIn a medium bowl, mash almond butter and flax seed meal together with a spoon until completely combined.Add the maple syrup, cocoa powder, protein powder and cinnamon.Combine the two mixtures.With lightly oiled hands, form the mixture into 20 small balls. Roll the balls in the coconut and put them in the freezer for about 30 minutes to set.Serve and enjoy!
