Recipe: Cauliflower mashed 'potatoes'
Silky, buttery, creamy and delicious, cauliflower puree is a low-calorie and low-carb alternative to mashed potatoes.

Cauliflower mashed "potatoes"
1 head cauliflower
2–3 tablespoons grass-fed butter (such as Kerry Gold)
Salt and pepper to taste
Fresh chives (optional)
Chop cauliflower flowerets into 1–1 1/2-inch pieces. Discard cauliflower core and stalks.
Bring water to boil in steamer pot. Add cauliflower and steam for 10–15 minutes or until cauliflower is tender (but not mushy).
Place steamed cauliflower, butter, salt and pepper into food processor. Blend until desired texture is reached, scraping down sides of processor and adding 1–2 tablespoons of liquid as needed.
Optional: Garnish with minced fresh chives.
