Recipe: Healthy applesauce snack cakes
Conventional store-bought muffins have an average of 600 calories and 25 grams of fat, says MultiCare Wellness Dietitian Chelsey Lindahl. This recipe provides a delicious muffin with one-third of the calories and 75 percent less fat.
In addition, these great fall muffins provide added health benefits from the vitamin C-rich applesauce and antioxidant-rich spices like cinnamon, allspice and cloves. Certain spices, such as cinnamon, also have an anti-inflammatory effect on the body which helps improve overall health and wellness, says Lindahl.
1/2 cup butter or margarine
1 1/2 cups granulated sugar
1 tsp vanilla
2 cups all-purpose flour
1 Tbsp baking powder
1 tsp baking soda
1 1/2 tsp ground cinnamon
1 tsp ground allspice
1/2 tsp ground cloves
2 cups unsweetened applesauce
Preheat oven to 400 degrees. Grease or paper-line muffin tin.
In a large bowl, cream butter and sugar. Beat in eggs and vanilla until light and fluffy.
Sift together flour, baking powder, baking soda and spices. Add to creamed mixture alternately with applesauce, mixing well after each addition.
Spoon into prepared muffin cups, filling each about 2/3 full. Bake in preheated oven for about 20 minutes or until firm to the touch.
Makes 16 snack cakes.
