Recipe: Sinless chocolate pudding
Who doesn’t love chocolate?
This recipe is chock-full of nutrients: antioxidants, potassium and heart-healthy monounsaturated fatty acids. As an added bonus, it is also suits the masses: it’s dairy free, vegetarian, vegan, Paleo and has no refined sugar. Dig in!
Avocados are a nutritional powerhouse, and in this recipe they lend an amazing creaminess. Not an avocado fan? Not to worry. By the time the recipe is whipped up you won’t even be able to tell avocados were added at all.
You can make this recipe your own with endless topping ideas: chopped nuts, dash of cinnamon, coconut flakes, chia seeds, whipped cream or coconut cream or fresh strawberries. You could add a dash of cayenne if you’re into spice.
This is also a great recipe for toddlers and kids. Store it in mess-free snack bags like the ones pictured below for a quick, mess-free treat on the go.
Sinless chocolate pudding
Total prep time: 10 minutes
2 ripe avocados, peeled and pitted
1 (15-ounce) can coconut milk
1/2 cup unsweetened cocoa powder
1/4 cup honey
1/4 cup chopped dates
1 tablespoon vanilla extract
1/8 teaspoon cinnamon (or to taste)
Add all items to high-speed blender or food processor. Blend until smooth. Serve and enjoy. (Don’t forget to lick the bowl!)
